Fermented with wild yeasts and then aged in wine barrels with orange peel, Goose Island's Sofie is a tart, dry, Belgian Style Farmhouse Ale. With 6.5% ABV and 25 IBUs, Sofie is a smooth, refreshing Belgian Saison. Sofie is sold year round in bottles and on-tap. She pours out champagne colored with a fluffy head, and is best sipped in a wide mouth glass. The nose of this sparkling ale smells of white wine, pepper, oranges, and Belgian Yeast; the orange peel in the wine barrels are the source of the citrus aroma. As with the nose, the taste is orange, lemon, white pepper in the middle, wheat malts, and a finish of creamy vanilla. If you like champagne, you'll probably like Sofie. This ale develops in the bottle for up to five years, and pairs with many kinds of cuisine, from fresh oysters to lobster to light cheeses.
