Bieres de Chimay is a craft brewery in Balieux, Belgium, which makes around half a dozen fine beers. Chimay Cinq Cents is the brewery's Tripel, an 8% ABV beer available year-round in bottles, growlers, and on-tap. It's crafted with malted barley, wheat starch, hop extract, yeast, sugar and water-this is a top fermented Trappist beer, which is refermented in the bottle and not pasteurised. Chimay Cinq Cents pours out a rich, hazy gold with a short head that settles quickly. With a pleasant, floral nose, this inviting brew later smells of citrus and grapes, as the beer warms. The taste is of fresh hops, and fruity notes of muscat and raisins, leading to a bitter hop finish, just as a Trappist beer should. Try pairing Chimay Cinq Cents with Mediterranean cuisine, sharp or pungent cheeses, or pork and poultry dishes. This Tripel sips well from a snifter or goblet at 45-50°F.
