Westmalle Tripel is a spicy, dry trappist ale which Brouwerij Westmalle crafts with a five week long secondary fermentation. The Belgian brewery makes their Tripel a powerful 9.50% ABV, and they make it year-round, available in bottles and on-tap. Westmalle Tripel pours out a clear straw yellow hue with a tall foamy ivory head that settles and laces gently. Its nose smells of citrus, apricot, apple, white wine, farm grasses, sweet malts and Belgian spice. The taste is equally inviting, with more citrus, sour apple, Chardonnay, fresh-cut grass and subdued Belgian funk. The finish is hoppy and clean, the body of this ale light with sparkling carbonation, the aftertaste is fine citrus notes. This Tripel sips nicely from a snifter or goblet at 45-50 degrees F, and it can be stashed in the cellar to age at 45-50 degrees F. Westmalle Tripel is a good match for Mediterranean cuisine and sharp cheeses.
